Greeting Tree's Roasted Chicken

Nothing beats coming home after a long day at work and walking through the door and you are greeted by the smell of roasted chicken with mash potatoes and rolls (and your family too). This meal is such a satisfying meal any time of the year.


When I was first married I would make a chicken by plopping it in the crock-pot, adding some onions and potatoes, spices, and then I would add enough water to cover the whole chicken. This wasn't a too bad of a way to make a chicken, but once I learned how to properly make a chicken, I realized what I was missing! You know you've made a roasted chicken correctly when the
white meat is just as moist and juicy as the dark meat.




Making a whole chicken is extremely economical for many reasons. With our family of three I usually get two dinners and 1 to 2 lunches. The bonus.... The key to a great tasting, savory roasted chicken is a butter rub. Butter makes everything better, even chicken! I apply my butter rub all over the chicken including underneath the skin if possible.


Another secret to making a great roasted chicken is to place the chicken breast side down sitting on top of a row of carrots. This not only allows the white meat to soak up more juices as it cooks, but placing the chicken on top of the carrots allows air flow under the chicken creating a more even roasting session.

Greeting Tree's Roasted Chicken

Roasted chicken is such a savory delight that has put hunger at bay for centuries. Going into the 21st Century, this is a staple dinner in our home.

ingredients


  • 1 small to medium chicken
  • 4 to 5 carrots, washed and peeled
  • 1 whole clove of garlic plus 2 cloves of minced garlic
  • 1/2 cup of purple onions, chopped
  • 3/4 cup of water
Butter Rub
  • 1/4 cup of butter, melted
  • 1 teaspoon of season salt
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 1/2 teaspoons of Rosemary or thyme
  • A dash of black pepper
Optional Add Ons
  • 3 potatoes, washed and sliced into large chunks
  • 3 Carrots, washed and peeled 
  • 1 small bundle of fresh Rosemary or thyme

instructions

Chicken Assembly
  1. Line the bottom of a large crock-pot with the 4 to 5 carrots.
  2. place completely thawed chicken on top of carrots breast side down.
  3. Prepare the butter rub by combining all "butter rub" ingredients in a bowl and mixing well.
  4. With hands, apply butter rub all over chicken including under the skin if possible.  Reposition chicken on top of carrots. 
  5. Stuff 1 clove of garlic, have of the chopped onion and the fresh bundle of Rosemary or thyme inside the chicken. 
  6. Sprinkle remainder onions, minced garlic around the chicken. 
  7. For the extra add-on, position potatoes and carrots around the chicken. Pour the 3/4 cup of water in bottom of crock-pot. 
  8. Place lid on crock-pot and cook on low for 8 to 10 hours. Serve with warm rolls and salad.
