Chicken Fried Rice

When I learned how to make chicken fried rice it was a godsend. Mainly to those nights where I run around the kitchen trying to figure out what to make or those busy nights when I only have 30 minutes to make something for dinner.




When we would go out for Chinese food one of the things I always use to get was fried rice, but now that I make it at home I have ventured away from my staple order and have tried other delectable delights on the menu.

For the longest time I always felt my chicken fried rice wasn't quite good enough... there always seemed to be something missing. One day I decided to make chicken lo mein for dinner and one of the ingredients was fish sauce. When my husband and I dove our faces into dinner that night we both knew... this was the missing flavor in my chicken fried rice! Another ingredient I like to add is cilantro. Cilantro gives the fried rice an extra strike of color as well as a complimentary flavor to the dish.


Chicken fried rice is another one of those versatile/ make-it-how-you-like-it recipes which you all know I love! If you are vegetarian... skip the chicken and add more veggies (I've done this when we had no chicken in the house). If you don't like the veggies I put in, try some different ones. Another great thing about this recipe is even if you do decide to make it vegetarian, it's very filling and satisfying without the meat.


Adding scrambled eggs makes this dish extra appealing to the eye and gives the fried rice and extra punch of protein... The eggs are a great add-on if you're taking the vegetarian route. I also want to mention that you need to start with cold, cooked rice. I usually make mine the day before for another meal, but make a double batch, and use what's left for the fried rice.

Chicken Fried Rice

Chicken fried rice is a healthy meal that can be concocted in under 30 minutes. Most of the ingredients you already have in your fridge and pantry.

ingredients:


  • 1 tablespoon extra-virgin olive oil
  • 1/3 cup finely diced onion
  • 1/4 cup finely  diced green bell pepper
  • 1-2 cloves minced garlic
  • 1/4 cup peeled and finely  diced carrots
  • 1/4 cup soy sauce
  • 1 1/2 teaspoons of fish sauce
  • 1/4 cup rice vinegar 
  • 1 1/2 cups precooked, cold rice (the rice must be cold so it's best make the rice ahead of time and store in the refrigerator) 
  • 1/2-1 cup cooked, chopped chicken
  • 3 eggs, scrambled
  • 1/2 cup frozen peas
  • 1 tablespoon finely diced cilantro 
  • 1 teaspoon season salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • A dash of black pepper

instructions:


  1. Heat oil in a large frying pan on medium heat. 
  2. Once the oil in the pan is hot add the onions, bell peppers, garlic, and carrots and cook for 10 minutes or until tender. 
  3. Add the soy sauce, fish sauce, rice vinegar, and prepared, cold rice to the pan and cook for about 5 minutes stirring occasionally. 
  4. Add the cooked chicken, scrambled egg (scramble the egg ahead of time in a different pan), frozen peas, and all the spices. Stir until ingredients are mixed together. Place a lid on the pan and turn the heat down to medium-low. Cook until heated through and the peas are tender, but not mushy, about 10 minutes. 
  5. Just before serving add the fresh cilantro.
